Some afternoons you are supposed to snack on a savory treat. Really, it is written in the laws of keeping yourself happy, snacky, and sassy. Wait, what? Oh, nevermind.

Cilantro Arugula Pesto

1 bunch of cilantro
1 1/2 Cups of arugula
1/4 C Oil
1/8 – 1/4 C plain yogurt
handful of parmesan cheese
handful of toasted pine nuts
juice half a lemon
salt, pepper, dash of red pepper flakes

All ingredients are an approximation. This was, literally, thrown together (everything n a blender and press ‘go’!) in an attempt to be creative with some dinner inspiration. I believe that an open faced quesadilla could be tasty: cilantro arugula pesto, sauteed onion, mushroom, red pepper with leftover maple soy glazed tempeh – with a little goat cheese, chive topping? Yes, that will do!
