
Birthday love!
Do you ever arrive home to find that a gigantic box has been delivered to you…and you can’t recall ordering anything? Then you look closer and suddenly realize a familiar handwriting….CincyBff sent a package!!!! I wanted to rip open the box…but I didn’t want to that box of happiness to be opened just yet…I wanted to savor that moment. I put the scissors down and took a step back. First up, dinner…but I had no time for fussiness…fanciness…or frivolous dishes! I had beautifully wrapped packages beckoning me from the living room!
A winter slaw salad was made on Sunday. Remember those chili chocolate black bean cookies that I tricked..I mean.. fed my family with over the holidays? My New Roots website had this gem as well! Although, I don’t know exactly why I choose this particular recipe in all honesty. It was healthy (chocked full of raw savoy and red cabbages, kale, carrot, and scallions) and since everyone else in America is turning towards the ‘cleansing’ craze this time of year (*shudder*) and trying to eat healthier, I figured it was a good dinner to have on a Sunday night. So…away I chopped, and chopped and more chopping of vegetables. See?

And then the tahini dressing ingredients were thrown in a jar. This involved olive oil, tahini, lemon juice, a little agave syrup and water were combined. Dancing commenced…err, I mean…the dressing was blended using a very precise shaking method. And ta-da…

Tonight I stopped by the local grocery and picked up a piece of haddock. I was encouraged recently to eat more protein each day. Fresh haddock was found. Once home, I sliced onion and lemon slices very thinly put the fish to rest on this bed of goodness. I drizzled a small amount of olive oil over the top, added a little salt, pepper and dill, a sprinkling of panko breadcrumbs and popped it into the oven. That’s it! I baked it at 350* for about 30 – 35 minutes and dinner was served!

And here I am. I find myself surrounded every day by acts of kindness, thoughtfulness, love and generosity. I would like to think that we are all embracing the positively radiant energy from within ourselves and spreading it outwards for others to grasp onto. Maybe…just maybe?
